Some of La Garrotxa's restaurants tell the history of Besalú through their gastronomy (Besalú Gastronomic group); others apply innovative ideas to the region's most traditional cooking (Volcanic Cuisine group); others create even more innovative dishes, and there are even those are rewarded with Michelin Stars.
Signature cuisine, Volcanic Cuisine, seasonal cuisine... the possibility of enjoying a good meal is guaranteed.
The prospects for the future are encouraging: while La Garrotxa Volcanic Zone Natural Park preserves scores of old varieties of fruit tree, the SIGMA consortium keeps a seed bank of all types of plant historically cultivated in La Garrotxa, and restaurant groups retrieve traditional ingredients and prepare historical recipes. Work is being done to pull together all these endeavours to generally improve the farming of indigenous and traditional varieties and get them used once again in restaurants.
